Case Study

Developing Solutions for a Processed Cheese Manufacturer

Customer Challenge

A customer was experiencing difficulty when producing processed cheese using a medium-mature cheddar cheese as the raw material. The cheese was excessively sticky on the production line and the finished product displayed poor sliceability.

The Issue

This specific processed cheese recipe used a high cheese inclusion rate. The customer wanted the cheese raw material to have a high level of flavour, which is why the product was based on an 8-month-old medium-mature cheddar. This made it a real challenge to minimize stickiness in the manufacturing lines and optimizing the sliceability of the final product slice whilst also retaining a high level of flavour.

The Solution

We worked in partnership with the customer to understand the key requirements from a taste and functionality perspective while the R&D team also worked to understand the processing conditions. We then analysed all the chemical and rheological data of the selected cheddar recipe and used this to develop a new recipe for a medium-mature cheddar.

Starter cultures were carefully selected and key manufacturing variables were adjusted to control proteolysis during maturation to increase the level of intact casein in the final product.

The Result

A flavourful medium-mature cheddar cheese with improved functional performance, ultimately reducing stickiness during processing and improving the sliceability of the final product.
